Tasty Caramelised Orange Chicken
This is a recipe my Mother has been making for years ! We came across it in 1979 in one of our local Spanish newspapers and still have the original clipping !! Makes a "different " dish to serve dinner guests !
Ingredients : (Organic where possible )
Serves 4
4 Chicken pieces with skin
6 Large juicy Oranges
1 Large Lemon
2 Garlic Cloves
4 Tbsp Brown Sugar
4 Tbsp Honey
Method:
Squeeze 5 of the Oranges ( leaving one for decoration later ) and the lemon.
Add the crushed garlic and the honey to the juice.
Lay the chicken pieces in an oven proof dish and pour over the juice mixture.
Leave to marinate for an hour basting frequently.
Pre heat your oven to a medium heat ( Gas 5 / 190 Celcius ).
Cook chicken for one and a half hours or until your liking.
20 minutes before end of cooking time sprinkle the brown sugar over the chicken and return to oven, this will make a crisp caramelised coating.
Decorate the dish with Orange slices from the leftover orange and serve with new potatoes and a crisp green salad.
